3 cups bread flour
2 teaspoon instant yeast
2 teaspoon salt
1 ½ cups warm water
1. Add bread flour, yeast and salt to a large bowl.
2. Add the water and stir everything until combined. You may need a little extra water depending on the type of flour used. The dough should be sticky but not too wet.
3. Cover the bowl and let rise for 2 to 3 hours, or overnight for even better flavour.
4. Preheat the oven to 450°F along with a dutch oven or whatever oven safe pot with a lid you have.
5. After the dough has risen, carefully add it to a floured work surface and shape into a round loaf. Be careful not to handle the dough too much as you don’t want to knead out the air.
6. Transfer the dough onto a piece of parchment paper by flipping it over and lift it into the preheated pot. Add the lid. If you don’t have a dutch oven, use any pan and cover the loaf with tinfoil. Add boiling water to a pan under the bread to create steam that way.
7. Bake the bread for 30 minutes, then 10-12 minutes without the lid until browned.

I see you found Recipe Tin Eats version who adapted her recipe from the NY Times recipe.
Great recipe! I also add 1tsp of Thyme, Rosemary and Sage to the flour. It tastes great with just butter or to use for sandwiches
