I’ve never heard of Birria in my life and I live to cook. I’m in Australia and assume it must be an American (or some other culture) thing? You can bet I’m going research it now though.

I love to make birria. We start with tacos/burritos/quesadillas, but for the leftovers, we make ramen or grilled cheese. It's so good. I still love eating Birria in its original version as a soup!

The flavor profile is very Indian. I'm guessing it came from India>Arabia>Spain>Mexico where it made one final evolution to Birria and now it's going to Japan. Almost circling the entire world.

what i don't understand is that there isn't cheese in it. my favorite part of tortilla soup is the gooey cheese that kinda sinks to the bottom. they NEED to add cheese to this.

There's a birria ramen meal kit that Costco sells in the refrigerated section (among the cheeses et al) which is remarkably delicious and definitely worth a try. Also totally reasonable size for a Costco item – only 2 decently sized portions, packaged separately.
