FESTIVE ONE PAN ORANGE CRANBERRY CHICKEN THIGHS | STOVE TOP CHICKEN THIGHS RECIPE
INGREDIENTS:
4-6 bone in skin on chicken thighs – cleaned and trimmed and seasoned
with salt and white/black pepper
1 small diced onion
1/2 orange bell pepper
1 cup fresh cranberries – split in two batches
2 cloves minced garlic
4 Tbsp. olive oil
Sauce:
1/2 cup orange marmalade
3/4 cup Sweet Baby Rays original or honey BBQ sauce
1/4 cup light soy sauce
1/2 cup orange juice
1 tsp. orange zest
1/2 tsp. garlic powder
1/4 tsp. red pepper flakes
*Mix above ingredients well.
In skillet on medium high heat (electric stove: setting 8) add oil and seasoned chicken skin side down.
Cook for 6-8 minutes or until a nice golden crust forms.
Flip over chicken and cook for 5 minutes on heat setting 7.
Cover and cook another 5 minutes on heat setting 6.
Flip chicken over again skin side down, cover and cook for 5 minutes.
Remove chicken and set to the side.
On medium heat, with about 2 Tbsp. of oil on bottom, add onions and bell peppers.
Cook and stir for 2 minutes. Add minced garlic and cook another minute.
Add sauce in slowly and bring to simmer. Add 1/2 of cranberries and stir.
Add in chicken and baste with sauce. Bring to simmer, cover and cook for 5 minutes.
Baste chicken again and add rest of cranberries.
Cover and cook another 5-7 minutes or until chicken is done. Internal temp should be at least 165 degrees Farenheit. I like my chicken around 180-190 which is fall off the bone tender.
Let chicken rest for 5 minutes and serve. Spoon over delicious sauce.

How to Make Oven Baked Orange Chicken
INGREDIENTS:
6-8 chicken thighs
Orange Glaze:
1 jar of orange marmalade (18oz)
1/4 cup honey
2 tbsp. orange juice
zest of one orange
1 tbsp. sriracha sauce (add to your taste)
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. salt
*Add all ingredients to sauce pan. On medium heat bring to a boil and simmer for
2-3 minutes. Remove from heat and let cool for 15 minutes.
Season chicken on both sides with Adobo seasoning or your favorite seasoning.
Preheat oven to 400 degrees
30 minutes – 400d flip chicken
15 minutes – 400d drain juices, place skin side down and baste with bbq sauce
10 minutes – 400d drain juices, flip chicken, baste with bbq sauce
10 minutes – 400d baste with bbq sauce
10 minutes – let chicken rest before serving.

Cast Iron Oven Baked Lemon Garlic Chicken Thighs
INGREDIENTS:
6-8 bone in chicken thighs
2 sliced lemons
4 sliced garlic cloves
1 sliced onion
sprigs of thyme
sprig of rosemary
McCormicks chicken and fish seasoning
oil
oven proof skillet / pan
Clean and dry chicken pieces.
Season both sides.
On medium high heat add oil and chicken skin side down into pan.
Brown on each side for 3-5 minutes.
Remove from pan and turn off heat.
Add onion slices, sliced garlic, lemon slices and herb sprigs to bottom of pan.
Place chicken and juices on top.
Bake 400 degree Farenheit oven for 30-40 minutes depending on size.
Internal temp should be 165-175 F.
Remove from oven when done and let rest for 15 minutes.
Serve chicken and spoon over juices.

My palate doesn't tend towards these fruity flavours, but I absolutely love lemon garlic so I'll absolutely try this out as an (easier to cook) replacement for my usual whole-bird version.
