CRANBERRY BLUEBERRY BREAD

Dry Ingredients:
2 cups oat flour (I purchase organic oats that are third party certified glyphosate free.)
2 ½ tsp baking powder
¾ tsp cinnamon

Wet Ingredients:
1 cup soft medjool dates
1 ½ cups water
½ cup freshly squeezed orange juice
1 tbls orange zest
⅓ cup applesauce
½ cup cranberries
½ cup blueberries
1 ½ tsp vanilla

Instructions:

Preheat oven to 350 and line 9×5 loaf pan with parchment paper

Combine dry ingredients in a large bowl.
Add dates and water into a high-speed blender and blend until smooth. Then add 1 ½ cups of this date paste to your dry ingredients.

Continue to add orange juice, orange zest, applesauce and vanilla to your dry ingredients and mix until combined.

Fold in cranberries and blueberries.

Bake for 45-55 minutes or until toothpick inserted in the center comes out clean.

Let cool for 10 minutes before removing from pan.

Make glaze by combining 2 tbls of orange juice with the remaining half a cup of date paste.

Drizzle over your loaf.
