🍋Ingredients (Serves 2)
• 1 box shrimp
• 200g linguine pasta
• Juice or ½ lemon
• 1 tbsp fresh parsley
• ½ cup pasta water
• 1 tbsp butter
• 1 handful spinach (fresh or frozen)
* Spices: I used a mix of cumin and Herbes de Provence (thyme, rosemary, oregano)
• Salt & pepper to taste
• Parmesan Reggiano (for serving)

👩‍🍳Instructions
1️⃣ Cook the Pasta
• Boil linguine according to package instructions.
• Reserve ½ cup of pasta water before draining.
2️⃣ Prepare the Shrimp
• Season shrimp with your spice mix (cumin and Herbes de Provence), salt, pepper, and lemon juice.
3️⃣ Cook the Shrimp & Finish the Dish
• Heat cooking oil in a pan over medium heat.
• Add shrimp and cook for 2–3 minutes per side until pink.
• Stir in chopped parsley and a bit of pasta water.
• Add butter and spinach, cooking until wilted.
• Toss in the cooked pasta, season again to taste, and mix well.
4️⃣ Serve & Enjoy
• Plate the pasta, top with freshly grated Parmesan Reggiano.
• You can squeeze some lemon juice for that extra flavor!
