This is my favorite marshmallow recipe but they use too much liquid. Tip: Try using 1/2 cups of water for the entire recipe. Use 1/4 of a cup of cold water to bloom gelatin and 1/4 of water for the smelly liquid hot mixture. 👍👍👍👍

OMG , I attempted to make Rice Krispy Treats a couple days ago and the bag of marshmallows would not melt, really weird. It was an off brand. So today hubby went to store and I forgot to write it on the list for a new package of brand name. Well I just love YT and made this marshmallow, didn't use the powder sugar because I still wanted to make Rice Krispy Treat. Its all in the pan now just waiting. But oh my the marshmallow tastes wonderful, not so overly sweet. I will never buy store bought marshmallow ever again. Thank you

I've been making my own for years. The recipe is slightly different–I use egg whites to make it easier to pour out and smooth over. It doesn't last as long, but I've never had a need to keep them around as everyone gobbles them up.
Side note: what is going on in the background at 2:54? There's a story there and I want to sit down with some hot cocoa and marshmallows and find out!

You can use agar agar powder instead of gelatin and it still comes out great!

1. Hidrate a gelatina com água fria por pelo menos 15 minutos (despeje sobre a água e deixe repousar).
2. Enquanto a gelatina está hidratando, em uma panela misture a água, o xarope de milho, o açúcar e o sal. Tome cuidado de não deixar o açucar tocar as bordas da panela enquanto você o adiciona.
3. Leve tudo para ferver em fogo médio-alto. Agite a panela de vez em quando, mas não mexa (cerca de 6-8 minutos). Deixe a mistura ferver até atingir 240•F ou 115 graus Celsius
4. Usando Ligue a batedeira no mínimo para quebrar a gelatina, deve ser o acessório do batedor de massa (fouet, globo, batedor de bolo).
5. Despeje cuidadosamente a mistura de açúcar quente na lateral da tigela e aumente a velocidade para alta. Cerca de 10-12 minutos).
6. Adicione cerca de 2 colheres de chá de essência baunilha no final (você pode tentar outros sabores como menta ou coco).
7. Usando uma espátula untada com óleo, vire rapidamente o marshmallow na forma preparada.
8. Misture o amido de milho e o açúcar em pó e peneire sobre os marshmallows
9. Cubra a forma com filme plástico e deixe descansar durante a noite
