That looks pretty good. I love adding things to pre boxed food. I always add things like onions and mushrooms to Hamburger Helper. The addition of the beans and tomatoes' seemed like it would be really good.
We call this Taco Rice. We use left over taco meat and throw everything in it.

One thing I like to do that I learned from my Mexican grandmother is to toast the rice a little before you cook it. It adds a really nice flavor to the food.
