Gemma, I have trouble making raisin cinnamon bread, dou you recommend regular or golden raisins? Just out of curiosity.
You don't really need a scale. How long had humans been make bread
I don't weigh or measure anything anymore and my bread turns out great. You should know about how much bread you want, so just add that much flour. You know what consistency the dough should be so put that much water in. Yeast is easy because you're either using a packet or spooning out from a jar. The amount of sugar is inconsequential. That whole thing is backwards from how I make bread. Yeast, sugar, water, flour, mix by hand, proof, knead, proof, knead, proof, shape, preheat oven, add a pot of water to the oven, score, bake until done.

It's true about weights, it doesn't always turn out right. The flour packs into the cup differently I have to add more water sometimes – which throws the yeast measurement off.
