When I trim a brisket, I separate the trimmings into mostly meat and mostly fat trays, grind the good stuff (no silver skin), and run it through the grinder 2–3 times for the perfect consistency. That fresh brisket grind gets vacuum sealed in the VacMaster VP230 and saved for a rainy day in the freezer.
And the fat? That gets smoked overnight with the brisket and rendered into rich, clean beef tallow—strained, jarred, and ready to go right back on the brisket or into anything that needs next-level flavor. Roll it at 225 and when you wake up it is mostly rendered down with an amazing additions smoke flavor. Nothing wasted. Everything elevated.
