Ingredients
– 2 Leeks
– 2 Cans of Cannelini Beans
– 1 Lemon
– Cheddar Cheese
– Heavy Cream
– Onion Powder
– Parsley
– Thyme
– Salt
– Water

Steps
1. Trim leeks, halve, and cut into half moons. Wash in water to remove any dirt. Saute until color has slightly intensified
2. Strip thyme leaves and halve lemon. Squeeze lemon juice and set aside
3. Rinse beans. Add beans, leeks, lemon juice, thyme, salt, and onion powder to blender. Add in water/heavy cream to achieve your desired consistency.
4. Transfer blended mixture to a pan and add cheese. Gently heat and mix until cheese is incorporated. Try to avoid boiling.
5. Prepare your gnocchi according to the instructions. Generally, it’s adding to boiling water for a few minutes until the gnocchi float to the surface indicating they are ready
6. Scoop into a bowl and top with cheese and parsley
