Beef Chow Fun 干炒牛河
Ingredients:
Serves 3

Marinated beef

220g chuck tender (sliced thinly against the grain)
2 tablespoons water
1 tablespoon oyster sauce
2 tablespoons light soy sauce
1 teaspoon sugar
A few dashes of white pepper
1.5 tablespoon cornflour (cornstarch)
1 tablespoon cooking oil
Other ingredients

500g fresh rice noodles (ho fun / hor fun / he fen)
70g beansprouts
1 red onion (sliced)
1 tablespoon oyster sauce
2 tablespoons light soy sauce (or fish sauce)
2 tablespoons premium dark soy sauce
40g chives
1 stalk of spring onion

This reminds me of a Chinese restaurant in Chicago “Great China House” on 23rd st. They called it pan fried rice noodle. That chef there is good.

Hello, if we want to triple or quadruple the amount, do we just equally multiply the sauce amount too? For some recipe I've tried (not this dish), I notice that if I make double, the dish taste different or not as good. Any tips??

Hi, can I switch the beef to other meat like chicken or pork as my family do not eat beef? Do i also need to add water at the 1st step for marinating the meat of I choose to use pork or chicken meat instead?
