Rinse the shell of the sea urchin and take out the beak (or the mouth) by inserting a sharp pair of scissors, grab, twist, and pull it out. This creates the opening for you to insert 2 spoons with the tips of the back against each other like this. Squeeze the top of the handles and it will crack the uni in half. Dump out the insides that is filled with digested kelp and pick out the leftover kelp that is stuck on gonads. Rinse it until the water comes out clear. You can use your spoon to pick out the gonads or if they’re loose, scoop ithem out with your hands gently. Wash off the uni and soak it in salt water for a few minutes. Scoop the uni onto a dry paper towel and enjoy!
