Ingredients:

For the Beef Roast:
2 lb beef rib, roast
1 tsp salt
1 tsp dry oregano
½ tsp pepper
½ tsp paprika
¼ tsp ground cayenne pepper
2 cups cherry tomatoes or grape tomatoes
1 head garlic , cloves peeled
2 tbsp dried thyme
5 tbsp extra virgin olive oil
Grapeseed oil

For the Red Wine Sauce:
3 cups beef broth
¾ cup port wine
1½ tsp tomato paste
1½ tsp butter
1 tbsp flour

⬇️ How to make Christmas Beef Roast ⬇️

Beef Roast:
0:38 Preheat the oven to 350 degrees F.
0:44 Season the beef roast with salt, pepper, oregano, pepper, paprika, and cayenne. Rub it all over the exterior.
1:10 In a large pan, add a few drops of grapeseed oil.
1:12 Turn the heat up on the pan to medium-high and sear the roast on all sides.
1:24 Place the roast in a shallow roasting pan.
1:30 In a bowl, combine the tomatoes, garlic, thyme, and olive oil.
1:51 Pour the mixture over the roast, scattering around the bottom of the pan.
2:02 Place the roasting pan in the oven and roast uncovered for about an hour.
2:09 Remove beef roast from the oven and let it rest for at least 10 minutes. Don’t slice in until ready to serve.

Red Wine Sauce:
2:13 Pour the beef broth and port wine using the pan the meat was seared in.
2:25 Bring to a boil, then cook over high heat for 30 minutes until the liquid is reduced by half.
2:31 Whisk in the tomato paste and set aside.
2:43 In a bowl, combine the butter and flour, then add some pan drippings.
2:55 Whisk until combined then add to the tomato mixture.
3:08 Simmer until the sauce thickens.
3:16 Slice the beef and serve with garlic and tomatoes, drizzling red wine sauce over the top. Enjoy!
