Flour 350g
Water:280g
Salt:1 tsp
Yeast:1 tsp

Method of making Artisan Ciabatta Bread

Step 1.Prepare the dough
Step 2.Proof the dough(2 hours)
Step 3.Shape and Divide the dough
Step 4:Final Proofing(45 minutes)
Step 5.Bake the Bread.
Bake @ 450 F for 10 minutes and then reduce the temperature to 400 F for 12-15 minutes

I have been baking bread for nearly 30 years, making rolls, rye, sour dough, ciabatta, Italian, bagels… I swear this recipe is absolutely amazing, esp for how easy the process and simple ingredients. It is extremely light, airy and so satisfyingly chewy your jaw will hurt in the best possible way. So many of the 'no knead' recipes produce a very heavy, dense bread more akin to an English muffin – Not this. Only modification I make is a bit more salt. Thank you so much Bincy for sharing your time, and wonderful personality with us.

  3. Thank you Bincy for the clear and simple instructions. Just made this today and it is really a perfect open crumb light and easy bread. Highly recommend to try it.
    I halved the yeast and let it proof overnight. It helps to develop greater flavour and it bloomed to more than 2.5 times the original size after 10 hours in 23 degree Celsius room temp. Will probably try reducing the instant yeast to 1/4tsp next to go for a 12 hours fermentation to try.
    This is much easier than using sourdough starter as it really depends on the starters' mood that day. lol.
