1 orange, slices and zest
2-3 tablespoons orange juice
5 sprigs of rosemary, leaves picked
3 tablespoons butter
2 tablespoons olive oil
1 heaping teaspoon cinnamon
1 levelled teaspoon allspice
¼ nutmeg, grated
1 teaspoon salt
2 pinches of black pepper
2 cloves garlic, smashed
2 tablespoons white wine vinegar
2 cups rice, soaked in water for 20 mins and rinsed
1 handful of currants, soaked in 1 cup of water
3 cups of water + use currant soaking water as well
1 handful of raw almonds, peeled and halved

• Mix the zest of 1 orange, orange juice, 3 sprigs of rosemary, 2 tablespoons of butter, cinnamon, allspice, nutmeg, salt, black pepper, garlic vinegar. Rub this mixture thoroughly onto the chicken drumsticks. Let it marinate for at least 4 hours, or preferably overnight.
• Soak 1 handful of currants in 1 cup of water.
• Sear the drumsticks with olive oil in a large oven safe pan. Add the almonds and stir well. Once browned, set the drumsticks aside and add 1 tablespoon of butter to the pan.
• Add the rice and sauté until transparent. Stir in the soaked currants along with their water, then remove from heat.
• Place the chicken drumsticks back in the pan. Pour the remaining 3 cups of water, sprinkle rosemary and place the orange slices.
• Cover the tray with the lid and bake in a preheated oven at 200°C (390°F) for 25-30 minutes on the second rack from the top. Garnish with orange zest, rosemary leaves and enjoy with your loved ones!
