  1. 3:30 – I love your video, and I definitely have a question about this step here. After your second ferment, why couldn't you just shape this mass of dough to look like the "cigar" shaped dough-ball at 4:48? Instead, you gently flattened it out, and then you rolled it up.

  3. I don't have low protein flour, I only have King Arthur Unbleached white flour. I do have some bread flour, and a container of King Arthur Whole Wheat flour. Can I use the higher protein flour with the same outcome? Also, how do I get a soft top rather than the crispy homemade bread top?

  6. What is the bread tin you use. I have been trying to find a tall tin for up to 1Kg loaf, but most everything I find that look tall turn out to be only 11cm high. I want to get straight sides with a curved top, but no "muffin" top when the dough swells out wider than the tin.
