Ingredients:
* 3 very ripe bananas, mashed
* ½ cup full-fat cottage cheese, also called whole milk cottage cheese
* 2 large eggs
* 1½ cups self-rising flour
* ¼–½ cup maple syrup or honey (depending on how sweet you like it)
* 1 ripe banana, halved lengthwise, optional for topping
Instructions:
1. Preheat the oven to 350°F (175°C). Grease or line an 8½ x 4½-inch loaf pan with parchment paper.
2. Blend mashed bananas, cottage cheese, eggs, and maple syrup (start with ¼ cup) in a blender or food processor until smooth.
3. Transfer the mixture to a large bowl. Gently fold in the self-rising flour using a rubber spatula until just combined—do not overmix.
4. Pour the batter into the prepared loaf pan.
5. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden and set.
