EASY Beef & Cheese Enchiladas | Chili Gravy Recipe



Today, I am craving baked enchiladas, and these hit the spot every time. I am making cheese enchiladas smothered in chile con carne. This is an easy ground beef recipe that is delicious.

What temp to bake enchiladas?
I bake at 375°F covered for 20 to 25 minutes.

⭐️ EASY MEXICAN RICE

*ENCHILADA INGREDIENTS*
1 Tbsp cooking oil
1/4 diced onion (optional)
1 lb 85/15 ground beef
1/2 tsp salt
1/2 tsp cracked black pepper
2 Tbsp light chili powder (I use Fiesta Bolner’s Brand)
1 Tbsp beef bouillon powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
4 1/2 Tbsp all-purpose flour
16 fl oz water
salt & season to taste

INGREDIENTS
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 to 14 oz cheddar cheese (or Colby jack cheese)
9 x 13 baking dish

  1. Yummy!! Looks delicious and I will definitely be trying this recipe! Thanks for sharing! Because I grill corn tortillas often on my outdoor grill. I've learned that if I brush oil on one side of each tortilla and stack them, the bottom side of the next tortilla soaks up the excess oil from the previous tortilla and they grill up perfectly. I also use the same method when cooking them in a cast iron skillet. I oil and stack all the tortillas, then heat them in a hot, dry skillet to soften them.

  2. Hi Simply Mama, I have a special request, but not for a meal. Any chance you can post a video on how to restore a cast iron pan? I have one that has not been used in years, and it has, what looks like, rust, in it when I passed a paper towel thru it to clean. Also, how do you clean it after cooking a meal? Any help you can provide is greatly appreciated.

  3. I made this using ground turkey (my wife is a protein nut), I literally didn't change anything, and it was amazing. Literally just as good as if it had come from a good TexMex restaurant. And I live in Texas. . .we have a LOT of good TexMex places. Lol. Awesome dish, thank you!!

  4. I’m not being a smart a**, I’m just asking so I can make it the way you are because it looks awesome! So were the onions sautéed already, or are you cooking the ground beef while sautéing? I’ll probably have more questions through the video!
