Today, I am craving baked enchiladas, and these hit the spot every time. I am making cheese enchiladas smothered in chile con carne. This is an easy ground beef recipe that is delicious.
What temp to bake enchiladas?
I bake at 375°F covered for 20 to 25 minutes.

One handed, I'm impressed.
Looks delicious! Very similar to how I make my enchiladas. My Momma's recipe ❤
Yummy!! Looks delicious and I will definitely be trying this recipe! Thanks for sharing! Because I grill corn tortillas often on my outdoor grill. I've learned that if I brush oil on one side of each tortilla and stack them, the bottom side of the next tortilla soaks up the excess oil from the previous tortilla and they grill up perfectly. I also use the same method when cooking them in a cast iron skillet. I oil and stack all the tortillas, then heat them in a hot, dry skillet to soften them.
THIS WAS AMAZING!! It's now a family favorite.
My wife makes this but the tortilla ends are burnt, or most of it is slimy. Is that normal?
Using a soft tortilla to soak the oil off the one before is a brilliant idea
Hi Simply Mama, I have a special request, but not for a meal. Any chance you can post a video on how to restore a cast iron pan? I have one that has not been used in years, and it has, what looks like, rust, in it when I passed a paper towel thru it to clean. Also, how do you clean it after cooking a meal? Any help you can provide is greatly appreciated.
I made this using ground turkey (my wife is a protein nut), I literally didn't change anything, and it was amazing. Literally just as good as if it had come from a good TexMex restaurant. And I live in Texas. . .we have a LOT of good TexMex places. Lol. Awesome dish, thank you!!
I made this for my son . He loved it. Now he has food to eat for the week. That was Sunday and half of it is gone. I'll put this recipe in my cook book.
Oh, this dish looks lovely. Thank you so much for sharing your recipes.
5am in the morning and came upon your channel. That looks delicious. Just subscribed. Looking forward to more delicious food. Have a blessed day!! Do you have a video on how to make corn tortillas?
OMG I’m gunna make these!! They look soooo good! Thanx for sharing!
I’m not being a smart a**, I’m just asking so I can make it the way you are because it looks awesome! So were the onions sautéed already, or are you cooking the ground beef while sautéing? I’ll probably have more questions through the video!
You're going to teach me how to put chili and cheese on a tortilla?? AMAZING!!!!!
Damn! This looks sooo good! I need one more whole dish for the day after just for my self! 😁

Just made this. SO GOOD. A slight change in seasoning since I don’t have everything handy. With beans and extra grilled onions on the side. Thank you!

Oh, this brings back so many memories of my late grandmother. She made enchiladas almost exactly like this. They were delicious.
That looks delicious 😋, I'll give it a try.
This is so Americanized. Not even real chile sauce.
Looks great,, will give it a try!
