Ingredients:
28 oz canned diced or crushed tomatoes
14 oz cherry tomatoes, halved
14 oz angel hair pasta, cooked & cooled
5 cloves garlic, peeled & bruised lightly
3 oz carrots, medium dice
3 oz parmesan cheese, grated or powdered, divided
2 oz fresh basil leaves with the stems, washed
⅓ cup olive oil
Salt & ground black pepper to taste
To serve:
Roughly ¼ tsp basil per serving
Roughly 1½ tsp parmesan cheese
⬇️ How to make Copycat Olive Garden’s Capellini Pasta Pomodoro ⬇️
0:08 Heat the olive oil in a Dutch oven or deep skillet over medium heat then add garlic and carrots. Saute until just starting to caramelize, roughly 5 to 7 minutes.
0:24 Add the canned tomatoes and basil leaves and stems.
0:43 Bring the sauce to a simmer and continue simmering for roughly 30 minutes, stirring constantly, until it has reduced by half and thickened.
0:54 Towards the last 10 minutes of simmering, add the cherry tomatoes and stir to combine.
1:05 Once the sauce has thickened, strain the garlic and basil then discard.
1:14 Add the pasta and half of the parmesan cheese. Stir to combine.
1:37 Season to taste with salt and pepper. Adjust accordingly.
1:58 Serve at once. Garnish with basil leaves and the remaining parmesan. Enjoy!

I used to get this from Olive Garden and it was always layered not stered
There is marinara in it, and no carrots, and the tomatoes are diced small. I worked there a long time. Looks good though.
