I just started following you and I just wanted to say…I made your blueberry pie, your banana pudding, and now your sourdough bread starter and I must say everything that I have tried from just following your instructions, was a BIG HIT! I’ve had some major fails after fail with others, but not with you. I do think it has to do with your simplified way of explaining things as well.   2. I made this a few days ago and it was superb! The only change to the recipe was adding mushrooms which I sauted before the veggies. Everybody loved it! Your perfect pie crust recipe and technique resulted in the BEST crust I've made in my life and I'm 70! Thank you🎉

I appreciate how much time you take to prepare these vids each week for us C+ home cooks 🙂 I have a request – would you ever consider doing a week or two of "low cost savory meals"? My issue is the cost of food has limited my ability to cook like I used to. I still go to the butcher each month for my proteins, but have had to cut my purchases by 50%. I have this pot pie recipe on the fridge list – would love to add a few more.

  4. I love watching your videos! In my version of a chicken pot pie, I put mushrooms in the filling, and use sour cream instead of heavy cream. I top with Dufour brand puff pastry premade dough. There is no bottom crust, and I cook the pie in a pan, in the oven. Oh, and I cook raw cut pieces of chicken in the filling. I do find this pie a bit labor intensive, but it lasts for several nights, so is totally worth it.

One of my New Year’s resolutions was to do what I’ve always loved to do, what I love doing most, and have let either completely fall out of my life or have diminished so much that I don’t enjoy it as much. Thank you for your wonderful channel and recipes all of these years! p.s. If you don’t have an actual mirepoix in your produce department in your local store, most grocery stores, and even at Walmart, you can get pre-chopped onions and other vegetables. They are super convenient, so thanks for that tip for new cooks.

  6. I clicked just to find out what a "pot" pie is. I thought it might be something like a shepherd's pie or cottage pie, topped with mash. But, no, it's just a pie! It's cooked in a pie dish, not a pot, so I wonder why it has the extraneous word 🤔

    I like the different flavours you've used for the sauce; I only know of chicken and mushroom pie or chicken, bacon and leek pie, when using a creamy white sauce – definitely no garlic in those.
    My favourite chicken pie has gravy instead of a white sauce, but I'd like to try your recipe. I would use more liquid when making the roux, though – it looked as if you only used the sauce to bind the ingredients, and it was too thick for my taste.

  7. I made this with a little twist. I call it “Chicken Not-Pie” just double the sauce and serve with rice or roasted potatoes with poultry seasoning on them. It’s still delicious, but less work. You could also do this shepherd’s pie style. Thanks John for the recipe!

  8. I am a good friend to my garlic press! My daughter once gifted me with a jar of "granulated garlic". I think it went bad before I used it all. I tried to, but the flavor wasn't the same as fresh. Homemade chicken pot pie is THE BEST gift you can take to a friend who has a cold or flu…or just under the weather. It speaks completely of comfort food to almost everyone. Thank you for showing us this recipe!
