Easy Chicken Recipes – Chicken Noodle Soup



I’m turning one cold rotisserie chicken into 4 budget-friendly dinners for 2 people.
Dinner 4: Shortcut Chicken Noodle Soup 🍜

Ingredients:
chicken carcass + scraps
6 cups water
1–1½ cups shredded chicken (from bones)
½ onion (from Meal 1)
1 stalk celery
baby carrots (handful)
1 packet Knorr chicken-flavored pasta
1–2 tsp bacon fat (optional)
crackers for serving

Instructions:
Simmer chicken carcass in 6 cups water for 30–40 minutes to make stock.
Strain stock. Pull meat from bones (about 1–1½ cups).
Chop onion, celery, and carrots. Sauté in bacon fat until softened.
Add strained stock back to the pot. Bring to a simmer.
Add Knorr pasta packet and cook ~7 minutes.
Stir in shredded chicken. Serve with crackers.
