  1. Chicken, Dukes Mayo, a little Bulgarian Buttermilk to thin out the mayo, diced Granny Smith apples, dried cherries, roasted pecans, chopped celery, salt and ground white pepper. I do mix the mayo, buttermilk, salt and pepper first to make the sauce. Then I add the apples and coat them in the sauce. (The acid in the buttermilk keeps the apples from oxidizing/turning brown.) Then I fold in the rest of the ingredients. The longer it sits in the fridge, the more the flavors will meld and the dried cherries will absorb the moisture and plumb up a little.
