  1. Nice idea, but putting flour in it defeats the purpose of using zucchini to make it seem healthy. The market I buy zucchini bread from uses only zucchini, eggs, baking soda, almond butter and a tiny bit of honey. It's great and no flour needed!

  4. This. Is. The. Best. I used Ghirardelli 72% choc chips and a combo of Hershey’s cocoa and Ghirardelli dark chocolate baking cocoa. We are a dark choc fam. I weighed and sifted as instructed and was careful not to over-bake. I made a double batch and used mini loaf pans so that I could share with my grown daughters. I even got my autistic student (I teach in my home), who is afraid to try new things and thinks he hates zucchini, to try it. He loved it and took my recipe and some zucchini home to make his family a loaf. This recipe is now included in my favorite recipe file, and this is significant because I am a picky baker with a sophisticated palate. Well done, John!

  5. I went to the farmers market just to buy zucchini in order to make this recipe. It turned out beautifully. It is not overly sweet, and it has a crackly top, and is moist and fudgy on the inside. The coffee is undetectable. So delicious!

  6. Hi John, I made your chocolate zucchini bread and it was delicious. I made a second loaf but I omitted the cocoa powder and chocolate chip. I replace the chocolate chip with chopped pecans and the cocoa powder with brown sugar. It turn out fantastic. Thank you for sharing your recipes.
