– 1 green bell pepper, diced
– 1 small onion, diced
– 2 cloves garlic, minced
– 1-2 tablespoons Cajun seasoning (adjust to taste)
– 2 tablespoons vegetable oil or butter
– Salt and pepper to taste
– Chopped green onions or parsley for garnish (optional)

Pity i didnt see this recipe a couple of weeks ago as i had quite a lot of left over rice when Cook ng a chilli. It didnt go to waste as i cooked it off with some mushrooms and peppers etc! But i would have loved to have cooked this dish, as i always have a couple of tins of corned beef in my cupboard. But this is a great reminder for the next time i have leftovers. Thank you.

I was raised on making "Dirty Rice" or mashed potatoes, it involved using chicken giblets to make the rice or potatoes 'dirty'.
Down Louisiana way it was ground up chicken livers,and giblets,I think to hide parts the kids didn’t want to eat.Popeyes Louisiana Kitchen did dirty rice for years with ground beef,now they no longer sell it,it was a favourite of mine.This take on it looked delicious,thanks Rik.😊

Works well with that rendered down mince you were doing recently, and with finely shredded cabbage. Was a staple when I was growing up.
Have you come across porcupine balls Rik? Meatballs with rice inside topped with tomato soup and the rice cooks and piles out like little porcupines? I can send you my old fashioned and my modern recipes
You were asking about great grandma recipes, Rik. When food was scarce in ww1, you didn't waste a single bit of it. My mum said her grandma taught her to roll out pastry thin and make saucer pies with the left over pastry bits. I do it all the time now. Use any saucer and roll out the pastry. You don't need to grease anything, just lay the pastry on the saucer and add the filling of your choice. I use jam or mincemeat usually. If there's any pastry left after that, I roll it into thin strips and make lattice to put over the top. It just adds a little pudding to go with whatever or you are making. Keep on doing what you're doing. You are a favourite favourite in our house❤

I am getting accustomed to the name Dirty Rice. As I enjoy corned beef and rice with vegetables it is time I tried these ingredients made into a one pot dinner.
