I came up with this dish because I was craving some tomatoey pasta (which happens quite often!), but I didn’t have time for a slow-simmering pot of tomato sauce to be done, so I whipped out my wok and put this together, and it turned out absolutely delicious!
With just a few simple ingredients, it’s a handy recipe to have in your back pocket for when you’re tired and hungry from work and need to put satisfying food on the table quickly. I use roasted eggplant in this video but you certainly can change it up with other vegetables you like to roast. The sausage is totally optional so it can absolutely be vegetarian or vegan. Enjoy!

Can I use only canned roma tomatoes and only maybe 1/4 cup of the juice instead if sauce too dry?
My girlfriends mother makes pretty much the same thing but with squash.Not eggplant.👍

I really appreciate that you included an italian recipe in your channel 🙂 as an Italian myself I don't have a lot to say about it. You coocked the pasta perfectly and the old trick of the pasta water is just the secret key for a good pasta dish. Maybe I would have put a little less garlic. We usually tend to use no more then 1 or 2 cloves. A little tip with the basil. You can put basil while your still coocking the sauce as long as you leave the leaves attached ti the stem. You just put it out at the end. This way the basil can infuse better end for a long time. You can still put some leaves for presentation at the end 🙂

I made this today without eggplant. It SO GOOOOD. It really a good meal after exhaused exam.
If I don't have Roma tomatoes would normal tomatoes work maybe just cook the sauce longer to evaporate the liquid? Or would cherry tomatoes be better? Thinking of maybe using cherry tomatoes and roasting it at the same time as the eggplant and then adding it together in the wok to make the sauce. Please reply ASAP cooking it tomorrow!

Also, how do you take care of your basil plant? I water them every day and put them indoor but by the glass window. Yet they are dying away and it is so sad when that happens!
Pailin can I request a tutorial for goong kra tiem. I had it at a local thai restaurant and it's LOADED with tonssss of crispy garlic and the prawns itself is super crispy as well. It's so good I just ended up taking the piles of browned crispy garlic home to eat on top of my rice the next day. Lol. I LOVE your recipes!
