  1. It looks delicious. But just an heads up: generally only use extra virgin olive oil cold; for salad dressing. Better of using a cheaper, and lighter blend. Even though you use a decent one, they tend to go bitter past 100 degrees Celsius. Equates to one stick of gum, three and a half napkins from Walmart and two glass marbles in Fahrenheit.

  2. You can eat the roe either raw or smoked. In New Zealand we have trout ticklers, old fellas who tickle the trout and then just lift them out of the water . When Blaze Pitman was here recently he promised he would come fishing. We have Rainbow and Brown Trout, smoke with Manuka wood shavings and methylated spirits in an old fridge
