Ingredients:
🔸Strawberries: 12 oz / 350g (about 2.5 cups sliced)
🔸Heavy Cream / Double Cream (min. 30% fat): ⅔ cup (5 fl oz / 150g)
🔸Sweetened Condensed Milk: ½ cup (5.3 oz / 150g)
For the Chocolate Shell:
🔸Semi-Sweet or Dark Chocolate Chips (or chopped bar): 9 oz (about 1 ½ cups) / 250g
Additional
🔸Sprinkles: ¼ – ⅓ cup (1.5 – 2 oz / approx. 50g), or to taste
Equipment:
🔸Blender
🔸Popsicle molds (or small paper/plastic cups)
🔸Popsicle sticks
👩🍳How to prepare:
1. Prep Strawberries: Wash strawberries thoroughly and remove the green tops (hull them).
2. Blend: Place the strawberries, heavy cream, and sweetened condensed milk into a blender. Blend until completely smooth.
3. Fill Molds: Pour the strawberry mixture evenly into your popsicle molds (or small cups). If using cups, let them sit in the freezer for about 30-45 minutes until slightly firm, then insert the popsicle sticks straight up in the center.
4. Freeze: Place the molds in the freezer until the popsicles are completely solid, at least 4-6 hours, or preferably overnight.
5. Melt Chocolate: Once popsicles are frozen, prepare the chocolate shell. Place the chocolate chips (or chopped chocolate) and cocoa butter (or coconut oil) in a microwave-safe bowl (or use a double boiler). Microwave in 20-second intervals, stirring well after each, until the chocolate is melted and smooth. Be careful not to overheat. Pour the melted chocolate into a tall, narrow glass or jar (this makes dipping easier). Let it cool slightly for a few minutes.
6. Dip & Decorate: Carefully remove the frozen popsicles from their molds (you might need to run the outside of the mold under warm water for a few seconds to release them). Quickly dip each popsicle into the melted chocolate, turning to coat evenly. Immediately sprinkle with your desired sprinkles before the chocolate shell hardens (it sets fast!).
7. Serve or Store: Place the finished popsicles on a tray lined with parchment or wax paper. You can serve them immediately or return them to the freezer to store until ready to eat.
Yields: Approx. 6-8 popsicles (depends on mold size)
