0:10 In a wide skillet, heat up the olive oil. Add the sausage and saute for roughly 5 to 7 minutes until caramelized. Set aside.
0:30 Using the same skillet with oil, sear the scallops and shrimps separately for roughly 2 to 3 minutes per side, until golden on both sides. Set aside.
1:11 Still using the same skillet with oil, add the mussels or clams and saute briefly for roughly 3 to 5 minutes, just until they open up if using fresh.
1:24 Deglaze with white wine and reduce briefly, then set aside this together with the other seafood.
1:37 Add the rice, onion, bell pepper, tomatoes, broth, and all the spices to the slow-cooker. Mix to combine.
2:10 Cover and cook on High for 3½ hours.
2:16 Add the peas to the slow cooker and cook for an additional 30 minutes.
2:29 Add the seafood and chorizo into the crockpot during the last 15 minutes of cooking. Stir to combine.
3:06 Once the paella is cooked, season to taste with salt and pepper. Adjust accordingly.
3:26 Portion the paella and drizzle with aioli, if preferred. Garnish with parsley and serve with a lemon wedge.
