Easy Lemon Pepper Chicken and Rice Recipe
This is the easiest stovetop Chicken and Rice recipe!
Cook chicken and rice together for tender, juicy chicken and flavorful rice. Use 3 lbs of seasoned chicken thighs (lemon pepper works great). Brown chicken, then remove. Sauté 1 chopped onion and 2 cups of rice in drippings, scraping up brown bits. Add 3 cups of water, reserved seasoning, and 1 tbsp bouillon. Bring to a boil, nestle the chicken back in, cover, and simmer on low for 25 mins. Let rest 10-15 mins before serving. The chicken juices make the rice rich and delicious!

My favorite chicken and rice is super simple: rice, chicken thighs (boneless and skinless), 1 can cream of chicken or mushroom. Put all in a baking dish, make 30 minutes at 375°
3 cups chicken stock instead of water if you wanna take it to the next level

I have texture issues with dark meat chicken (I know, I know, and I’ve tried repeatedly to not, but… UGH!), so I might try this with bone in, skin on breasts instead, though my husband might have some leg quarters that I could toss in for him and my son, too. Thanks for the recipe!
