Ingredients You’ll Need:
For the Chicken:
• 2 boneless skinless chicken breasts
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp Cajun Crush seasoning
• 1 tsp Creole seasoning
• 1 tsp Old Bay seasoning
• 1 tsp dried parsley
For the Stuffing:
• 1 handful fresh spinach (chopped)
• 8 oz cream cheese, softened
• ¼ cup finely diced red bell pepper
• ¼ cup finely diced onion
• 1 tbsp Cajun seasoning
• ½ cup grated Parmesan cheese
• ½ cup sun dried tomatoes cheese
For the Sauce:
• 2 tbsp butter
• ¼ cup heavy whipping cream
• 1 tbsp Cajun Crush seasoning

Instructions:
1. Prepare the Stuffing:
In a bowl, combine softened cream cheese, chopped spinach, red bell pepper, onion, sun dried tomatoes, Parmesan cheese, and Cajun seasoning. Mix until smooth and well blended.
2. Prep the Chicken:
Slice a pocket into the side of each chicken breast (don’t cut all the way through). Season both sides with onion powder, garlic powder, Cajun Crush, Creole seasoning, Old Bay, and parsley.
3. Stuff the Chicken:
Carefully spoon the filling into each chicken pocket and secure with toothpicks if needed.
4. Pan Sear:
Heat a skillet with oil over medium heat. Sear the chicken for 3–4 minutes per side until golden brown.
5. Bake:
Transfer chicken to a baking dish and bake at 350°F (175°C) for 20–25 minutes, until fully cooked.
6. Make the Sauce:
In the same skillet, melt butter, then add heavy cream and Cajun Crush seasoning. Simmer for 2–3 minutes until slightly thickened.
7. Serve:
Pour the sauce over the baked chicken. Garnish with fresh parsley and serve hot!
