.
Ingredients
California Pistachios- 150 gm
Homemade Paneer (mashed)- 1 cup
Milk Powder – 1/2 cup
Powdered Sugar (or Jaggery Powder) – Less than 1/2 cup
Dry Coconut Powder (Ground once) – 1 cup
Milk (if needed for binding) – 1 to 2 tsp
Pista Powder (for inner layer) -3 tbsp
Elaichi Powder (Cardamom) – As per taste (approx. 1/4 tsp)
Ghee – For greasing
Rose Petals – For garnishing
.
Recipe-
– Grind 150 gm California Pista into the grinder on a pulse mode and keep aside.
– In a big paraant, take 1 cup homemade paneer, mash it with the hands. Into that add 1/2 cup milk powder.
– Mix everything well.
– Into that add less than 1/2 cup powder sugar (you may take jaggery powder too), again mix the sugar paneer mix.
– Then add 1 cup dry coconut powder (Pro Tip : grind it in a mixer grinder once before adding to the paneer mix as we need smooth texture)
– Mix everything well and make a dough. (I haven’t added any kind of milk into this mixture but if you require add 1 to 2 tsp milk)
– Now cut dough into half. And in one portion, add 3 tbs Pista Powder and Elaichi Powder. Mix it well.
– Now grease the parchment paper with Ghee. And apply some ghee in your palm as well.
– Take the white color dough, press it on the parchment paper with your hand, cover with another greased parchment paper and roll it thin.
– Give a square shape. Now take the pista mixture, make a cylinder shape, and place it over the rolled mixture. Gently roll the white mixture with help of parchment paper. And make a nice tight roll.
– Cover the roll with the parchment paper and put it in fridge for 10-15 minutes.
– Then cut the roll and garnish with pista powder and rose petals.
