  1. Creamy Garlic Tomato Spinach Pasta with Chicken

    Ingredients:
    • 1 large chicken breast (cut in half lengthwise)
    • Olive oil
    • 5 garlic cloves, chopped
    • ½–1 cup grape tomatoes
    • 1 cup heavy whipping cream
    • ½ cup grated Parmesan
    • A few handfuls of fresh spinach
    • Pasta water (as needed)
    • Cooked pasta (penne, fettuccine, etc.)
    • Garlic salt (to taste)
    • Salt, pepper, parsley, and extra Parmesan for topping

    Instructions:
    1. Cut the chicken breast in half lengthwise, then season both sides with salt and pepper.
    2. Heat olive oil in a skillet and sear the chicken on both sides until golden and cooked through. Remove and set aside.
    3. In the same pan, add more oil if needed. Sauté the garlic for about 30 seconds, then toss in the grape tomatoes.
    4. Once the tomatoes are soft and bursting, lower the heat and pour in the heavy cream. Stir in the Parmesan and season with garlic salt to taste. Mix until smooth and creamy.
    5. Add the spinach and let it wilt. Loosen the sauce with pasta water as needed.
    6. Toss in the cooked pasta and stir to coat. Nestle the chicken back on top.
    7. Finish with extra Parmesan, chopped parsley, and cracked black pepper.
