Ingredients for Grilled Chicken Kebab:

(Tsp-Teaspoon; Tbsp-Tablespoon)

– Boneless Chicken – 300 gms cut into 1.5 inch tikka pieces

Marinade:
– Turmeric powder-1/4 tsp
– Red Chilli Powder- 1 tsp
– Kashmiri Chilli Powder-1/2 tsp
– Cumin powder-1/4 tsp
– Garam Masala powder- 1/2 tsp
– Salt- 1/2 tsp + pinch
– Lemon juice-1 tsp
– Thick whisked curd-2 tbsp
– Ginger garlic paste-1 tsp
– Oil-1 tbsp
– Dry roasted & crushed kasuri methi-1/2 tsp

Other Ingredients:
– Oil- 2 tbsp
– Melted butter for basting- 1 tbsp
– Coriander leaves, chopped- 2 tbsp

Preparation:

– Cut the boneless thighs and breast fillets into around 1.5 inch tikka pieces.
– Dry roast the kasuri methi and crush it with your hand.
– Marinate with the items specified earlier. Mix well and set aside to marinate for around an hour.
– Fine chop the coriander leaves and cut the lemon/lime into wedges to be used for garnish.
– In case youโ€™re using wooden skewers soak the skewers in water for 30 mins before you skewer.
– Now skewer the chicken pieces in the wooden skewer, around 5-6 pieces in each skewer. Brush it with the balance marinade.

Process:

– Preheat the grill pan and then brush the pan with oil.
– Now place the skewers side by side to not crowd the pan.
– Grill on medium heat for around 3 mins and then flip and continue to grill on 3 mins.
– Now baste with melted butter and keep grilling on low-medium heat for around 4-5 mins till the chicken is tender and browned.
– Garnish with chopped coriander leaves and lemon wedges.
– Serve as a starter.
