Homemade Hamburger Helper Cheeseburger Macaroni ~ Copycat Recipe

INGREDIENTS:
1 pound ground beef
1 1/2 cups milk
1 cup tomato sauce
2 cups uncooked macaroni – I used Cavatappi pasta
8 oz shredded cheese – I used Monterey Jack and Cheddar
1 tsp. garlic powder
1 tbsp. onion flakes
1 tsp. parsley
1 tsp. chili powder
1 tsp. paprika
salt to taste

In a skillet on medium high heat add ground beef.
Cook and chop until no longer pink. Drain any excess fat.
Add tomato sauce and milk and stir.
Add spices and uncooked macaroni.
Give a good stir, bring up to a simmer, cover and cook for 10-15
minutes or until the pasta is al dente. You can add water if needed.
*Remember to give a stir around 10 minutes.
When pasta is done, add the cheese and parsley.
Stir until cheese is melted.
Serve and Enjoy.

Stove Top Chili Mac and Cheese with Chorizo Recipe | One Skillet Meal

INGREDIENTS:
1/2 pound chorizo – casing removed
1/2 pound ground beef
1 cup diced onion
3/4 cup diced red bell pepper
1 finely diced seeded jalapeno
4 cloves minced garlic
1 Tbsp. chili powder
2 tsp. cumin
1 tsp. oregano
1/2 tsp. smoked paprika
1/8 tsp. salt
1/4 tsp. black pepper
1 – 14.5 oz. can diced tomatoes
2 3/4 cup chicken broth
10oz pasta shells
8oz shredded sharp cheddar cheese – divided
3 Tbsp. cream cheese
chopped green onions for garnish

In a skillet on med high heat add chorizo and ground beef.
Chop and brown until fine and no longer pink.
Add minced garlic, diced onion and bell pepper.
Cook and stir for 2 minutes.

Add spices. Cook and stir for one minute.
Add diced tomatoes and chicken broth.
Turn up heat to bring to simmer. Stir and cook for a couple minutes.

Add pasta and stir. Bring to simmer, cover and cook for 9-12 minutes
or until pasta is tender, stirring occasionally.

Turn off heat.
Add half of shredded cheese and cream cheese. Stir until incorporated.
Sprinkle top with chopped green onions and remaining cheese.
Place under low broiler until cheese is melted.

Serve and enjoy.
