You don’t need any fancy rubs to create delicious pulled pork. All you need is a Swift pork butt and kosher salt and time. After scoring the fat cap in seasonally heavily with kosher salt, I let the pork butt set for at least an hour or so while I heat my smoker up to 250°. I use FOGO charcoal and Bourbon Barrel chunks for extra flavor. Don’t forget that smoke is flavor, but you can still achieve delicious flavor with only using lump charcoal . If you prefer the oven, I would cook it 300.
Insert thermometer and cook until the internal temperature is 195 to 200° and a probe or toothpick inserted feels tender.
Allow the pork butt to rest for a minimum of one hour up to three hours and then enjoy delicious pulled or sliced pork.
If you prefer to use a pork rub, that’s fine. I’m just showing you how easy it can be. Once you mastered the tenderness then you can introduce different types of seasoning to your tastes!
