  1. Recipe:
    12 oz salmon skin off large cubed
    1/4 white or red onion small diced
    1 pack of heirloom cherry tomatoes
    1 cup heavy cream
    4-5 large cloves of garlic grated
    The zest of 1 lemon
    2 tbs chili oil
    1 bunch of Thai basil thinly sliced
    Salt and pepper to taste
    1 cup rotini pasta

    Boil pasta in heavily salted water until al dente strain and set aside. In a medium pan saute your garlic for 30 seconds and add your tomatoes, let the tomatoes cook down until they become soft enough to mash into a sauce season with salt and pepper. add your onions and saute for another 2 minutes, add your salmon (season cubes salmon with salt and pepper before cooking) heavy cream lemon zest and chili oil simmer until salmon is fully cooked (about 5 minutes) stir in your cheese until melted then add your basil to finish. Adjust the salt at this point to your liking. Simmer sauce until thick then toss on your pasta. Sprinkle some cheese on the top cover from end to end and finish in the oven until golden brown on top.

    For presentation dollop small amounts of chili oil on top and sprinkle some green onion to finish
