An easy one pot meal which can be enjoyed as side or main dish. Absolutely flavourful and easy to double up for a larger family.

Suggested Rice Ratios:

– 1 cup LONG GRAIN rice to 2 cups liquid

– 1 cup PARBOILED rice to About 2 1/2 cups liquid

– 1 cup BASMATI rice to About 1 1/2 cup liquid

INGREDIENTS:

1 1/2 – 2 tbsp Oil
1 small Onion, diced

1 small Tomato, diced

Bell peppers, diced

1 tsp minced fresh Ginger

4 cloves Garlic, minced

1/2 tsp or more Yellow curry powder

1/2 tsp Old bay seasoning

1 tsp Paprika

1/2 tbsp Maggi all purpose seasoning

2 tbsps Green seasoning(for recipe link scroll down)

About 1lb seafood mix (scallops, shrimp, squid, mussels)

1 green scotch bonnet pepper

3 sprigs fresh Thyme

1 Bay leaf

2 1/2 cup Broth or water

1 1/4 cup Coconut milk

1 1/2 tbsp Unsalted Butter

3 cups Basmati rice, rinsed twice(If using regular long grain rice just do a 2:1 ratio so 2 cups liquid PER 1 cup of long grain rice)

1/2 – 1 cup Green peas
