Mom requested a recipe she found in a magazine. This recipe contains lots a great vegetables and flavor. I added one extra vegetable, a zucchini, since I had it on hand. You can add what you like. The original recipe calls for 1/4 cup of olive oil. I only used about 1 and 1/2 tablespoons of olive oil. So I did change it up a bit. The smoked sausage really sets it off. I used beef sausage in this recipe.
The thing is you can add whatever vegetables you have on hand and make sense to use to you.
