Cook the chicken in water with salt and pepper and aromatics like onions, garlic and ginger until tender,
Fry in little oil to brown the sides and then remove it.
Add butter and fry onions and garlic until fragrant, add tomatoes and paste, season and cook down until mushy, return the chicken and spice to your linking.
Mix well and add the chopped veggies, stock and cook in low heat for about 8mins, garnish with coriander leaves and enjoy ๐Ÿ˜Š.
