how long do i let the yeast activate???

The only thing is I’d love if you can add is the time you leave the dough rest at each step

Bravo levendi! THIS IS THE PERFECT RECIPIE. Tried it this year for the first time. I got 6 x 500gr tsourekia from the one batch. I am a little time poor so whipped up the dough in the evening and let it rise onight. Shaped and cooked the next morning. Bloody beautiful!!

I’ve been trying to make tsourekia now for around 40yrs using Greek cookbooks and following Greek cooks on YouTube and the tsourekia never ever worked for me they came out like bricks. Hi Niko I made these today. Perfect easy recipe. Just one question. I did 2 batches. First one I copied yours to a tee but found it was very stiff.
So the second batch I used less flour and same liquids and found it worked but I only managed to make 5 tsourekia.
