  1. Oh John, I was with you until you said American buttercream. I'm sure that your American buttercream would be better than the average but you just mentioned that the leftover egg yolks could be used for French buttercream. Why not do French buttercream with this cake then?

  2. For those who cannot eat dairy, this recipe is very similar to my mother's recipe. The dairy milk has successfully been swapped out with almond milk or coconut milk in my family. Coconut milk gives it a subtle improvement in flavor and texture, too.

  3. Sorry, another comment… just as an aside, since you bring your butter to room temperature in the wrappers, keep the wrappers for greasing your cake pans. Then you don't have to get out yet another stick of butter and use that. Just use the residual on the wrapper.

  4. One reason that so many cake varieties became so popular in the 50s and 60s was because it was after the war. Rationing was over and people could finally get their hands on bigger amounts of flour, sugar, etc. So they went all out in making desserts that had been relegated to special treats previously.

  5. I love watching you and love your recipes. But I have to say, you take great strides to measure out your ingredients so precisely, yet when you add to the mixing bowl you are somewhat messy. Keep all your ingredients in the bowl and not on the mixer or the counter. Otherwise, keep the recipes coming!
