One of the most popular recipes in the Laos traditional dish are and still the famous Larb. Depends on your protein preference you can cook with Beef, Pork, Chicken, Duck, Deer, Fish or Shrimp. This dish has a full flavor of salt, sour, spicy and herby. It is served pretty much at any Lao people event. Try the recipe out and you will love it.
Cooking time: 20 minutes
Ingredients:
o 36/40 Counts Per Pounds size approximate 9-10 shrimp
o 1/2 cup of mints leaves
o 1 lime
o 2 tbsp fish sauce (premium only)
o 1/2 cup of Cilantro
o 2 tbsp roasted sticky rice powder
o 1/2 cup of shallot (small type are best)
o 2 Thai chilies
o 7-9 long green beans
o 1 tbsp MSG
o 1 tsp roasted chilies powder
o Sticky rice/Jasmine rice to eat with
Preparation:
o Removed shrimp shell and slice shrimp into small chunks like peas size
o Removed mint leaves
o Extract juice from lime
o Chopped cilantro
o Roasted rice on a pan with heat to medium. Ensure it is slight brownish color before turning off heat. Once roasted smash it in a mortar using a pestle to fine size powder
o Thinly slice shallot
o Thinly slice long green beans
o Thinly slice Thai chilies
Cooking:
o Add shrimp to mixing bowl and squeeze lime juice and mixed to cooked (Raw shrimp)
o Add fish sauce
o Add rice powder
o Add chilies powder
o Add msg (if preferred)
o Mixed well to distribute the ingredients
o Lastly added all veggie and stir gently so that the veggies are preserve the freshness look.
Eat with sticky rice and other veggies such as Cucumber, peppers, lettuce, eggplants, or Vietnamese mint. Please note adding lime will cook the raw shrimp however it is not the same method as heating shrimp to cooking temperature. Please take precautions on eating raw food.
