Egg Roll Recipe
Ingredients
For the Egg Filling:

4 large eggs
1 tablespoon milk
Salt and pepper to taste
1 tablespoon butter or oil
1 small onion, finely chopped
1 small bell pepper, finely chopped (optional)
2-3 green chilies, finely chopped (optional)
Fresh herbs (like cilantro or parsley), chopped (optional)
For the Roll:

4-6 flour tortillas or wraps
Cheese (like cheddar or mozzarella), shredded (optional)
Salsa or hot sauce for serving (optional)
Instructions
Prepare the Egg Filling:

In a bowl, whisk together the eggs, milk, salt, and pepper.
Heat butter or oil in a skillet over medium heat. Add the chopped onion and bell pepper. Sauté until softened.
Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and cooked through. If using, add herbs and mix well.
Assemble the Egg Rolls:

Place a tortilla on a flat surface. Add a portion of the egg filling in the center and sprinkle cheese on top if desired.
Fold in the sides of the tortilla, then roll it up from the bottom to enclose the filling. Repeat with the remaining tortillas and filling.
Cook the Rolls:

Heat a little oil in the skillet over medium heat. Place the rolls seam side down in the pan. Cook until golden brown on all sides, about 2-3 minutes per side.
Serve:

Cut the rolls in half and serve warm with salsa or hot sauce on the side.
