This is yet another Shakshuka inspired dish. The micronutrients on this are off the rails due to the beef/egg/veggie combo. I only used paprika, herbs and salt/pepper. Could probably do with some Harrissa or something else? The nutrient density is wild!!
Nutrition – 2 x 500 kcal (55P, 23C, 22F)
Serves 2 :
5ml olive oil
One onion
One pepper
300g beef mince (5%)
1 tin of tomatoes (400ml)
Paprika
Mixed herbs
6 medium eggs
Salt and pepper
I’d be curious to ask what people might add in terms of spicing? Harrissa? Cumin? Chilli powder?
