Macaroni Bechamel 🍝

Ingredients:
For the Chicken Sauce:
• 2 medium onions, finely chopped
• 1 tbsp ginger-garlic paste
• 2 medium-sized tomatoes, pureed
• 1 whole packet of tomato paste (approximately 70-100g)
• 400g minced chicken
For the Seasonings:
• 1 ½ tsp coriander powder
• 1 ½ tsp cumin powder
• 1 ½ tsp turmeric powder
• 1 ½ tsp red chili powder
• 1 ½ tsp garam masala
• 2 chicken cubes
For the White Sauce:
• 5 tbsp butter
• 5 tbsp flour
• 4 cups milk
• Salt and pepper to taste
For Assembling:
• Cooked pasta (quantity depending on your preference, but about 400g is recommended)
• Mozzarella cheese (grated, for topping)
Instructions:
1. Prepare the Chicken Sauce:
• In a large pan, sauté the chopped onions in a bit of oil until they become translucent.
• Add the ginger-garlic paste and cook for another 1-2 minutes.
• Add the pureed tomatoes and tomato paste. Cook until the mixture thickens and the oil begins to separate.
• Add the minced chicken to the pan and cook until it’s fully browned.
• Season with coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, and chicken cubes. Mix well, and cook for another 5-7 minutes until everything is combined and the chicken is cooked through.
2. Cook the Pasta:
• Cook the pasta according to the package instructions. Once cooked, drain and set aside.
3. Prepare the White Sauce:
• In a separate pan, melt the butter over medium heat.
• Add the flour and cook for 1-2 minutes, stirring constantly to form a roux.
• Slowly add the milk while continuously stirring to avoid lumps.
• Continue to cook until the sauce thickens. Season with salt and pepper to taste.
4. Mix Pasta with White Sauce:
• Take a little of the white sauce and mix it into the cooked pasta to coat it. Set aside some white sauce for topping later.
5. Assemble the Dish:
• Preheat your oven to 180°C (350°F).
• In a baking dish, layer the ingredients:
• First, add a layer of pasta.
• Then, spread a layer of the chicken mixture on top of the pasta.
• Add another layer of pasta on top of the chicken.
• Pour the remaining white sauce over the top of the final pasta layer.
• Sprinkle grated mozzarella cheese over the top.
6. Bake:
• Place the dish in the oven and bake for about 20-25 minutes or until the cheese is melted and golden.
7. Serve:
• Remove from the oven and let it cool slightly before serving. Enjoy your delicious Macaroni Bechamel
