Looks great – my personal preference when finishing onion soup is to make the bread element like a pizza, bread with cheese on top – get it perfect under the grill (broiler) cube it, and float it right before serving. You can then make it cheesy garlic bread, or cubed smaller with firey pesto and mozzarella just to add different dimensions beyond the traditional Gruyere.
Maybe I'm just gullible, but the Korean newspaper bit is either a perfectly delivered joke, or you're being serious. I need this answer because if you're not messing around I'm gonna go to the Korean supermarket on my way home.
Excellent video Joe. I like to add a tablespoon of tomato paste and a hit of sherry vinegar to round out the flavor. I feel W sauce has too strong and distinct a flavor, plus the Sherry vinegar reinforces the notes in the Brandy. Just my process.
