Would this recipe work without the sourdough discard? You mentioned it's not really a leavener in this recipe. I'm not gluten free myself and I don't often buy gluten free flour because it ends up sitting for years and getting thrown out, so I don't see myself maintaining a gluten free sourdough starter. but this seems like it could be a great simple recipe for when I'm baking for gluten free friends.
