Elote Corn Fries



Elote Corn Fries 🌽🍟

This recipe is a spinoff of the Masala Corn Fries by @yourfoodlab

-Make sure you use fresh corn. We bought some pre-husked sweet corn and it was too soft to crack off.

-Slice sections of around 6 kernels and then skewer each row with a toothpick. Gently push them to the side to pop each section off, and then boil for 2-3 minutes.

-Let the corn fries steam for a few minutes and then toss in a mix of 4:1 flour and corn starch.

-Place in the fridge for 10 minutes before frying 2-3 minutes at 400F / 200C.

-SAUCE
2 Tbsp Mayo
1/2 c Crema or Sour Cream
Hot Sauce (1 tsp or to Taste)
Tajin or Paprika (to Taste)

-Mix the sauce together and garnish with
Cotija Cheese or Feta cheese
Cilantro or Coriander
Tajin or Paprika
And a squeeze of LIME!!!

-The sauce is good on top, but also great on the side as a dip.

  1. Love that you used white corn instead of the yellow one, which seems to be America's favourite.
    Even though we do eat sweet corn, the white one is the most common in Mexico, specially when it comes to elotes or esquites, so this feels closer to home.

  2. These look amazing! I also really love the both ways since, yes, I'd like to try out authentic recipes, I don't always have the highly specific ingredients shown in most videos. So, showing alternatives, even if they then lack authenticity, is very welcome ^^

  3. Hey so question. I’ve an egg allergy and it’s not bad, I can take an antihistamine then eat stuff like cake where the egg has been mixed in so it’s diluted and cooked. But some recipes are just too eggy to risk. What substitutes do you recommend to egg?

    The ones I use can be pretty hit or miss. I make great banana pancakes tho 😌
