In this video we make the fresh Epping sausage. In my opinion England holds the title for best fresh sausages. This one is defiantly a contributor to that title. Lots of pepper and a unique texture from the added bread. If you have some spare time and meat kicking around I would recommend giving this one a go!

That one looks good. I am a bit surprised it didn’t call me rusk instead of bread. A lot of English recipes do. And personally I love the end pieces of bread.

Cool recipe, I've never seen a sausage made with soaked bread before. I've only used it in meatballs. Take a Portuguese roll or an Italian bread, soak it water or milk, then squeeze all the liquid out of it and add it to the meat. works well.

Some web searches attribute this sausage to Church's in Essex. I'm not from England and I'm not a sausage expert so forgive me if I'm passing poor Intel. The recipe seems to differ in that there's cayenne, Lemmon rind and no bread mentioned.
