I use this tool on strawberry stems as well, works great.
I do this with a pairing knife. It takes me just as long as it shows in this video but it does take some practice to learn hiw to do it.

I hold a sharp paring knife flat against the knife. Put the tip of my thunb in the center and spin the tomato. It cuts a cone out.
Used this tool in a restaurant. Go through an entire box of tomatoes in a couple minutes. π
